For the Topping:

  • Melted butter – ¼ cup

Instructions

Step 1: Prep the Oven & Chicken
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish. Season the chicken breasts with salt and pepper. In a skillet, heat olive oil and cook the chicken until golden brown on both sides. Set aside.

Step 2: Sauté the Vegetables
In the same skillet, sauté onion, garlic, bell pepper, and mushrooms until tender and fragrant.

Step 3: Combine the Casserole
In a large mixing bowl, combine the sautéed vegetables, peas, corn, cream of chicken soup, chicken broth, sour cream, and shredded cheddar cheese. Mix well to create a creamy, flavorful base.

Step 4: Assemble the Casserole
Pour the vegetable and sauce mixture into the prepared baking dish. Place the cooked chicken breasts on top.

Step 5: Add the Crunchy Topping
Mix crushed butter crackers with melted butter, then sprinkle evenly over the casserole.

Step 6: Bake
Bake for 25–30 minutes, or until the casserole is bubbly and the topping is golden brown. Remove from oven and let it cool slightly before serving. Garnish with fresh parsley if desired.
