The Night a Simple Dinner Changed Everything

I never expected Chinese food to change the course of my life, but sometimes the smallest moments open the biggest doors.
That evening started out as ordinary as any other. I was juggling the chaos of single motherhood, trying to keep the house somewhat tidy while my two children seemed determined to undo every bit of progress I made.

Jamie, my five-year-old, was sprawled across the living room floor, building an elaborate Lego tower with the concentration of an architect. Emily, my toddler, had discovered the joy of yogurt as an art medium and was smearing it across the carpet, giggling at her own masterpiece.
I sighed, rag in hand, wondering how long it would take me to clean the mess—and how much energy I had left in me.

That’s when the doorbell rang.

I wasn’t expecting anyone. Wiping my hands on my jeans, I opened the door to find a delivery driver holding a large brown paper bag that smelled unmistakably of Chinese food.
“Mrs. Carter?” he asked, checking his phone.
