Ingredients
For the Meatballs:
- 3 lb ground beef
- 1 white onion, diced
- 2 eggs, lightly beaten
- 1 cup seasoned dry bread crumbs
- 1/2 cup fresh flat-leaf parsley, chopped
- 2 tsp coarse ground salt
- 1 tsp coarse ground pepper
For the Gravy:
- 4 Tbsp all-purpose flour
- 2 (10.5 oz) cans beef consomme or broth
- 1 Tbsp Worcestershire sauce
- 2 cups milk
- 1 tsp coarse ground salt
- 1 tsp coarse ground pepper
For Serving:
- 12 oz medium egg noodles, cooked according to package directions
- 1/4 cup butter
- 3 Tbsp fresh chopped parsley
Instructions
- Prepare the Meatballs:
In a large nonstick skillet, combine ground beef, onion, eggs, bread crumbs, parsley, salt, and pepper. Mix well.
Form the mixture into small meatballs, about 1 inch in diameter. - Brown the Meatballs:
Heat the skillet over medium-high heat. Brown the meatballs on all sides until golden. Remove from the pan and set aside. - Make the Gravy:
Using the leftover pan fat, stir in the flour and cook for a few minutes until golden brown. Gradually add the beef consomme and Worcestershire sauce, whisking to remove lumps. Slowly pour in the milk, continuing to whisk until smooth. Add salt and pepper to taste. - Simmer the Meatballs:
Return the browned meatballs to the skillet. Cover and cook over medium heat for 15 minutes, allowing the sauce to thicken and the flavors to meld. - Prepare the Noodles:
While the meatballs cook, mix butter into the cooked egg noodles. Serve noodles on a platter and top with the meatballs and creamy sauce. - Garnish and Serve:
Sprinkle fresh parsley over the top for a burst of color and flavor. Serve immediately while hot.
