Easy Mexican Street Corn

About Cotija Cheese:
Cotija is a dry, crumbly Mexican cheese made from cow’s milk. Its bold, salty flavor makes it the perfect complement to the creamy toppings and smoky grilled corn.


Ingredients (Serves 4)

  • 4 ears of corn, husks removed
  • ¼ cup sour cream
  • ¼ cup mayonnaise
  • ½ cup Cotija cheese, crumbled
  • 2 cloves garlic, crushed
  • ¼ teaspoon sea salt
  • 1 lime, zest and juice
  • ¼ cup cilantro, finely chopped
  • ½ teaspoon chipotle chili powder

Instructions

1. Grill the Corn

Preheat your grill to 400°F (200°C). Place the corn on the grill and cook for about 12 minutes, turning every few minutes to ensure even grilling on all sides.

2. Prepare the Topping

In a small bowl, combine the sour cream, mayonnaise, Cotija cheese, crushed garlic, lime zest and juice, and chopped cilantro. Mix until well blended.

3. Assemble the Street Corn

Spread the mixture evenly over each grilled ear of corn. Sprinkle with chipotle chili powder, then add extra Cotija cheese and a bit of chopped cilantro on top for garnish. Serve immediately.
