I’ll be honest—salads have never been my go-to. Unless they were drenched in dressing or served as a side I barely touched, I rarely gave them much attention. But all of that changed with one incredible, flavor-packed bowl. After the first bite, I knew something was different. It was fresh, tangy, and absolutely delicious—so much so that I found myself reaching for seconds before I’d even finished my plate.
What makes this salad so special is its perfect balance of textures and flavors. It starts with a vibrant bed of greens: peppery arugula, soft spinach, or baby kale, all freshly washed and tossed. From there, it’s layered with crisp cucumber slices, diced red bell pepper, finely chopped red onion, and sweet cherry tomatoes. A sprinkle of crumbled feta cheese adds a creamy, tangy note, while toasted almonds or walnuts bring a satisfying crunch. For a touch of sweetness, dried cranberries or cherries work beautifully.
The real star, though, is the dressing. It’s a simple, homemade blend of extra-virgin olive oil, fresh lemon juice, a splash of apple cider or red wine vinegar, a hint of honey or maple syrup, one clove of finely grated garlic, and a pinch of salt, pepper, and red pepper flakes (if you enjoy a bit of heat). Light and zesty, it brings everything together without overpowering the other ingredients.
