- Lemon zest (optional) – ½ tsp
Instructions
Step 1: Preheat & Prepare
Preheat your oven to 350°F (175°C).
Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhangs for easy lifting.
Step 2: Mix Dry Ingredients
In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
Step 3: Make the Batter
In a large bowl, whisk melted butter (or oil) with sugar, eggs, lemon zest and juice, yogurt, and vanilla extract until smooth and creamy.
Gently fold in the dry ingredients until just combined. Avoid overmixing to keep the loaf tender.
If using frozen blueberries, toss them with 1 tablespoon of flour to prevent sinking. Fold berries gently into the batter.
Step 4: Bake
Pour batter into the prepared pan and smooth the top.
Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean (a few crumbs are fine).
If the loaf begins to brown too quickly, tent loosely with foil halfway through baking.
Step 5: Cool & Glaze
Let the loaf cool in the pan for 10 minutes. Lift it out using the parchment paper and transfer to a wire rack.
For the glaze, whisk powdered sugar with lemon juice and zest until smooth. Drizzle over the cooled loaf.
Step 6: Serve & Store
Slice and enjoy with coffee, tea, or milk.
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week.
Chef’s Tips for a Perfect Loaf
- Go Fresh: Use fresh lemon juice and zest for a bright, vibrant flavor.
- Prevent Blueberry Bleed: Toss berries in flour before folding to keep your batter from streaking.
- Add a Crunchy Top: For extra texture, sprinkle a crumb topping made of ¼ cup flour, 2 tbsp sugar, and 1 tbsp cold butter over the batter before baking.
- Freeze for Later: Wrap individual slices in plastic wrap and freeze for up to 3 months for a quick treat anytime.
