  • Remaining ketchup and barbecue sauce mixture – ½ cup
  • Shredded mozzarella and cheddar cheese blend – 4 cups (2 cups for mixing, 2 cups for topping)

Instructions

Step 1: Preheat & Prepare

Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick spray.

Step 2: Make the Sweet & Tangy Sauce

In a medium bowl, whisk together ketchup and barbecue sauce until smooth. Reserve ½ cup for glazing later.

Step 3: Mix the Meatloaf

In a large bowl, combine ground beef, crushed crackers, onion soup mix, eggs, ½ cup of the ketchup-barbecue mixture, salt, pepper, garlic powder, and onion powder. Mix gently until just combined—avoid overmixing to keep it tender.

In a large bowl, whisk together milk and condensed cheddar cheese soup until smooth. Stir in the cooked noodles, 2 cups of shredded cheese blend, and season to taste.

After the meatloaf layer has baked, carefully spoon the mac and cheese mixture over the top. Spread evenly to cover the surface.

Step 9: Add Cheese & Finish Baking

Sprinkle the remaining 2 cups of shredded cheese evenly over the top. Return to the oven and bake for 17–20 minutes, or until the cheese is melted, bubbly, and lightly golden.

Step 10: Rest & Serve

Allow the casserole to cool for about 10 minutes before slicing. Serve warm and enjoy the perfect balance of savory meatloaf and creamy mac and cheese.
