For the Meatloaf
- 1 onion, chopped
- 1 tbsp olive oil
- ½ cup frozen peas
- ¾ cup breadcrumbs
- 3 tsp garlic, minced
- 1 ½ lb ground beef
- 1 large egg
- ¼ cup tomato sauce
- ¼ cup parsley, chopped
- ¼ cup BBQ sauce
- Salt and pepper to taste
For the Mashed Potatoes
- 1 ½ lb potatoes, peeled and cubed
- ¼ cup heavy whipping cream
- 4 tbsp butter
- Salt and pepper to taste
- 1 cup cheddar cheese, shredded

Instructions
- Preheat oven to 400°F.
- In a skillet, cook the onion and garlic in olive oil until softened. Let cool.
- In a mixing bowl, combine the onion mixture, peas, breadcrumbs, ground beef, egg, parsley, tomato sauce, BBQ sauce, salt, and pepper. Mix with your hands until well combined.
- Shape into a loaf in a 9×13 baking dish and bake for 30 minutes.
- While baking, boil the potatoes until tender, then drain. Add cream, butter, salt, and pepper, and mash until smooth.
- Spread the mashed potatoes over the baked meatloaf and sprinkle with shredded cheese.
- Return to the oven and bake for another 20 minutes, until the cheese is melted and bubbly.
