Smoked Sausage and Potato Bake – A Hearty Family Favorite

Ingredients You’ll Need

  • 2 ½ lbs baby potatoes (halved)
  • 1 ½ lbs smoked sausage (sliced into 1-inch pieces)
  • 1 large yellow onion (diced)
  • 1 green bell pepper (diced)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika (optional for extra flavor)
  • 1 tsp black pepper
  • ½ tsp red pepper flakes (optional for a little heat)
  • 4 tbsp butter (cubed)

Instructions

  1. Preheat oven to 350°F. Grease a 9×13 baking dish.
  2. In a large bowl, toss potatoes with olive oil, garlic powder, paprika, black pepper, and red pepper flakes.
  3. Add smoked sausage, onion, and bell pepper, mixing well.
  4. Transfer everything into the baking dish. Dot with butter cubes.
  5. Cover with foil and bake for 30 minutes.
  6. Remove foil and bake an additional 15–20 minutes, or until potatoes are fork-tender.
